This is my project for the day. I've only made stock one other time which was a disappointing affair. That particular chicken I used was not free-run which I am sure was a big influence in the flavour of the broth. So this time I am attempting a turkey stock from another inadequate bird. It was just your run-of-the-mill store purchased young turkey. I thought I'd try simmering it for a good 8-12 hours which should help with the flavour. I was despaired when (unthinkingly) I threw out the neck, heart, etc. after boiling them for gravy water. They would have been a good addition to the stock I am sure! How did it turn out? It looks yummy, anyway!
Well, the stock turned out mediocre. It was better than the chicken stock, but not fabulous. I am looking forward to investing in some free-range chickens come fall. I am sure that will make the needed improvements as I put tons of seaonsing and veggies into the stock I've already made.
